Swiss Chard Pasta
Swiss Chard is a vegetable that you may not find in the grocery store very often. It is a relative of the beet and can come in a variety of bright colors! It has a grassy/earthy taste that is very good, but can take some getting used to. This recipe is a good way of learning the flavor without letting it become overwhelming.
Ingredients
1 Pound spaghetti
1/4 Cup olive oil
3 cloves of garlic, minced
1 bunch of Swiss chard, chopped with stems and leaves separate
1/2 Tbsp lemon juice
1/2 Cup grated parmesan
Directions
Bring water to a boil and add spaghetti. Cook until pasta is cooked, but still has a bite to it. Drain
While pasta is cooking, add olive oil to a pan over medium heat. Add garlic and oil and cook until fragrant. Add stems of swiss chard and cook until easily pierced with a fork. Add in leaves and cook until wilted.
Add cooked pasta to the pan and toss with the chard and oil. Add lemon juice and parmesan.
Season with salt and pepper to taste
