Sweet Mint Lassi

Mint is a great herb that smells fantastic, tastes fantastic, and grows pretty easily. However, when it comes it actually using mint, it can be a bit more intimidating than it seems! One recipe that I discovered way back when I was a youth is mint Lassi. It is quick, easy, and very refreshing in the summer.

Ingredients

Drink:

  • 1 Cup of plain yogurt

  • 2 Tbsp of honey

  • 1/2 Cup of mint leaves (any variety will work and many different herbs will work)

Toppings:

  • Any variety of chopped nut

Directions

  1. Simply add together all of the drink ingredients and blend until mixed and frothy

  2. Pour over ice (optionally you can blend the ice as well for more of a smoothies)

  3. Top with any nuts you like! Enjoy!
