Peanut Coleslaw
Cabbage is a great, healthy vegetable! Traditional coleslaw is great, but after a summer of potlucks, grad parties, and cookouts, it can get a little monotonous. Try this coleslaw, which has similar sweet and savory vibes with a twist!
Ingredients
Slaw:
1 Head of shredded cabbage
1 Sweet pepper cut into strips (julienne)
1 Onion sliced thinly
Sauce:
3 Tbsp rice vinegar (or apple cider)
3 Tbsp peanut butter
2 Tbsp olive oil
1 tsp honey
1 Tbsp soy sauce
1 Tbsp fresh ginger
Directions
Add all sauce ingredients to a small bowl and whisk thoroughly.
Add slaw ingredients to a large bowl and toss together.
Drizzle sauce over slaw and toss to coat (or just use your hands for less spillage).
Eat right away or allow to chill in fridge.
