Peanut Coleslaw

Cabbage is a great, healthy vegetable! Traditional coleslaw is great, but after a summer of potlucks, grad parties, and cookouts, it can get a little monotonous. Try this coleslaw, which has similar sweet and savory vibes with a twist!

Ingredients

Slaw:

  • 1 Head of shredded cabbage

  • 1 Sweet pepper cut into strips (julienne)

  • 1 Onion sliced thinly

Sauce:

  • 3 Tbsp rice vinegar (or apple cider)

  • 3 Tbsp peanut butter

  • 2 Tbsp olive oil

  • 1 tsp honey

  • 1 Tbsp soy sauce

  • 1 Tbsp fresh ginger

Directions

  1. Add all sauce ingredients to a small bowl and whisk thoroughly.

  2. Add slaw ingredients to a large bowl and toss together.

  3. Drizzle sauce over slaw and toss to coat (or just use your hands for less spillage).

  4. Eat right away or allow to chill in fridge.
