Choose your Adventure Bowl

This is honestly one of our most used “recipes” when it comes to using vegetables. There are times at the end of the week when we have bits and pieces of various veggies with no cohesive plan. This recipe can use just about any vegetable, just about any meat, and just about any carb. That can be intimidating, but I’ll give a common version we use. It’s all about the sauce!

Ingredients

Veggies:

  • 1 Onion, chopped

  • 3 cloves of garlic, grated

  • 1 pound of broccoli (this is where you can get creative and add green beans, cabbage, peppers, Asian greens, etc)

Sauce:

  • 1/2 Cup chicken or veggie broth

  • 3 Tbsp Soy Sauce

  • 2 Tbsp Rice wine of apple cider vinegar

  • 1/2 Tbsp Corn Starch

Meat:

  • We typically use 1 pound of ground turkey, but ground beef, ground pork, and cubed chicken work great as well

Directions

  1. In a large wok, brown ground meat, garlic, and grated ginger if desired.

  2. In a small bowl, mix sauce ingredients until smooth and no clumps remain. Set aside

  3. Once meat is browned, add remaining veggies. Cook until veggies are easily pierced with a fork. Will vary depending on chosen veggies, with cabbage being very quick and broccoli taking much longer.

  4. Add in sauce mixture and toss to coat. Cook additional minute. Goes well over rice or rice noodles
